The Best Crock Pot Shredded Pork EVER
Ah, another crock pot recipe. I love these. I love how easy the crock pot makes my life, and how good it makes my meals. This shredded BBQ pork so easy it’s almost embarrassing. But not embarrassing enough not to share it. That’d just be mean, keeping you away from this smoky, juicy and delicious meal. I wouldn’t do that. And neither should you. Make it for a crowd, or just two of you. Either way, you’ll be happy it’s there to fill you up, and make your tummy happy.

Instructions
  1. Remove pork roast from packaging, and pat dry. Rub liberally with the 1/4 cup of BBQ seasoning. Place roast into crock pot insert, fat cap facing up (yes, leave it on there–that’s where the flavor and moisture will come from!) Roast in crock pot for 6-8 hours on low, or until the meat is beginning to fall off the bone.
  2. Slice off the fat cap, and discard. Remove the bone from the meat and discard that, too. Using 2 large forks, shred pork into bite sized pieces. Pour bottle of BBQ sauce into shredded pork and mix to incorporate.
  3. Serve on toasted bun, and drizzled with additional sauce (we like our sauce in this family!).
Recipe Notes

A few notes on this short but sa-weet recipe:

  1. The Sweet & Smoky BBQ Rub I use is one that I make in-house and keep in fairly large quantities in my kitchen.  We use it on everything from pork to chicken to beef to…well, you get the idea.  It’s easy to make and store, and will quickly become your go-to BBQ seasoning.  If you don’t have the ingredients to make this particular rub, you can use any other BBQ rub you may have on hand.
  2. This will make a lot of shredded pork.  I say it will feed 8 people, but that will be a matter of how hungry your brood is on that particular occasion, and how much they like BBQ pork.  What is so great about this recipe is that it can be upped pretty easily.  Also, if you are cooking for only two, like we do in this house, the leftovers are fantastic.  The flavors just get better on day two (and three).
  3. Speaking of leftovers, we use the extra shredded pork not only on sandwiches, but on nachos, in omelettes, or even in chili.  So versatile you’ll want extra to have in your freezer.
