Bloody Marys aren’t just for drinking anymore! Use a simple Bloody Mary Mix to mix-up your mid-week meal with this awesome Bloody Mary Pork Tenderloin. You’ll be enjoying the bold flavors of your favorite weekend drink with every bite!

Wildtree Bloody Mary Pork TenderloinI had a brainstorm the other day. I’d had some friends over to do some day-drinking on a Sunday (hey, what’s brunch without a little day-drinking??).  As I was cleaning up, I started thinking about what to do with the leftovers.  The berry cheesecake bites I’d made weren’t going to go to waste, that was for sure.  The dill dip was going to be a perfect topping for our roasted salmon dinner.  And the Sangria was quickly finished up by my hubby that evening.

But what about the bit of  Bloody Mary Mix I still had in the fridge?

FLASH! The light bulb went off. I’d use it as a marinade.

That coming Wednesday our schedule was jam packed. My trusty All-Clad Slow Cooker, which many of you know I have a love/love/love relationship with, was going to save dinner.  And the Bloody Mary Mix was going to help remind us that the weekend wasn’t far off. The tomato base paired with the spicy & peppery flavors was the perfect match for that juicy pork tenderloin.

And what better way to embrace healthier options than with Bloody Mary Mix?! And using this mix mid-week? Sold!  Who wouldn’t try this Bloody Mary Pork Tenderloin if you had the chance?

Recipe Notes

I am so digging this whole "4 ingredients = Dinner Greatness" kick I've been on lately!  Since there are only 2 of us in the house, this meal meant leftovers.  And that meant an awesome sandwich for lunch the following day.  A little toasted whole-grain bread, a little melted Monterey Jack cheese, and this Bloody Mary Pork Tenderloin had me diggin' on these flavors yet again.

My husband, on the other hand, chopped up some of the pork and put it on nachos.  Yeah, that's right.  Bloody Mary Pork Nachos. It's a thing now in our house.
