Bloody Mary Pork Tenderloin
4 ingredients + 1 crock pot = the perfect mid-week meal for the whole family. Rich and peppery flavors of your favorite brunch drink punch up an otherwise boring pork tenderloin to make you forget there are still a few more days until the weekend! What a way to keep your spirits up, and your stomach full, while you wait for the weekend and a chance at this delicious Bloody Mary mix in your glass! Instructions
  1. Slice the peppers & onions, and place them in the crock pot insert with the pork.
  2. Pour bloody mary mix over the top of the pork, peppers & onions. Add salt & pepper to taste.
  3. Cover and cook in crock pot on high for 4 hours, or low for 8 hours. Slice pork & serve with peppers & onions over mashed potatoes. Be sure to get that sauce on the plate, too, to amp up the robust flavors in each bite!

I am so digging this whole “4 ingredients = Dinner Greatness” kick I’ve been on lately!  Since there are only 2 of us in the house, this meal meant leftovers.  And that meant an awesome sandwich for lunch the following day.  A little toasted whole-grain bread, a little melted Monterey Jack cheese, and this Bloody Mary Pork Tenderloin had me diggin’ on these flavors yet again.

My husband, on the other hand, chopped up some of the pork and put it on nachos.  Yeah, that’s right.  Bloody Mary Pork Nachos. It’s a thing now in our house.
