Crazy Simple Crock Pot Red Wine Chicken
This Red Wine Chicken recipe, like nearly all others that are made in my adored crock pot, is a hearty and warming weeknight meal that is a cinch to make, and is a crowd pleaser every time. Take that, overly-complicated meals! Crazy Simple Crock Pot Red Wine Chicken to the rescue!

Instructions
  1. Wash & dry the mushrooms. Slice the carrots, onions & celery into similar-sized pieces. Peel and crush the garlic cloves.
  2. Place all of the ingredients except the wine into the crock pot insert, placing the herbs on top of the chicken.
  3. Pour wine over the ingredients. Cook on low for 6-8 hours.
  4. Serve with fresh veggies and a starch of your choice (um, hello mashed potatoes).

No, seriously.  It’s that simple.  And because this wonderful, flavorful any-night-of-the-week dish also makes a delicious jus (cooking liquid), serving this with mashed potatoes or parsnips or cauliflower (or a combination thereof, which I love) is the perfect way to catch that extra flavor on the plate.

Of course, serving this alongside the rest of the bottle of red wine is just the responsible thing to do.  After all, leaving it to possibly go to waste would be alcohol abuse.  And we don’t do that, right?
