Evil Dip
Evil, indeed.

It’s the end of football season (sad face!), but that means championship games, playoffs and the Super Bowl are around the corner!  And nothing gets you ready to cheer on your team (Go Buckeyes!!) better than “game food”.

Let’s face it, game food is rarely healthy food.  You can try and make it better for you, but in my humble opinion, you need hearty sustenance to get you ready to cheer, yell, scream, throw things at the television (yes, I’ve been know to do that) and be your team’s good luck charm.

One of our favorites–and likely the worst for us, too–is what we call “Evil Dip”.  Why evil?  It’s so evil it’s like the fru-its of the de-vil (gotta love a Mike Myers reference here!)  Well, once you see the ingredients, you will know why it’s so e-vil.  But if it weren’t so evil, it also wouldn’t taste so good!

So make this super easy, super popular, and super EVIL dip for the next big game.  Just remember to cheer for the right team (THE Ohio State Buckeyes and the Cincinnati Bengals being MY teams each season), and be sure to keep a defibrillator handy for the heart attack your team–and this dip–may give you!  GO TEAM!

Ingredients
  • 1 lb. Velveeta Yeah, it's not health food, but it really makes the creamiest dip possible
  • 1 lb. Sausage Jimmy Dean is our favorite, but you can use any sausage you like
  • 1 can Rotel You can use any spiciness level, but we go for original
Servings: people
Instructions
  1. Brown sausage in large frying pan; drain excess grease from pan.
  2. Chop up Velveeta into 1" cubes; place in microwave safe dish. Microwave on "high" for 2-3 minutes, or until you are able to begin to stir the cheese and the cubes begin to melt.

  3. Add browned sausage and can of Rotel (drained) to cheese mixture.

  4. Microwave on "high" for 5-7 minutes, or until completely smooth. Be sure to check on the dip every 2-3 minutes and stir to make sure it doesn't over cook.

  5. Serve with Frito Scoops or any other sturdy corn chip.

Recipe Notes

Depending on how quickly this dips is devoured, you may have to reheat and stir to keep it creamy and smooth.  Seriously addicting, and seriously e-vil.
