I’m a carnivore.  There.  I said it.  I grew up in a meat-and-potato (and casserole) household, and meat was a staple.  So even though I TRY (stress TRY) to eat healthier these days, mixing up meat with other proteins, there is just something irresistible about pork.  And if you can double your pleasure by wrapping one with the other, well, just poke me with a fork, ’cause I’m done.

In keeping with this week’s #ChocoBaconLove, I decided to up the ante on the pork side and wrap bacon around a pork tenderloin.  Too much, you say?  Pish posh.  After all, this week when we’re all focused on love and all that mushy stuff, why not give some love wrapped in bacon?  Everybody wins! (OK, I know how that sounds, but I swear it’s not meant to be dirty!)

Bacon Wrapped PorkloinSo now that we’re past the implications of that last comment, let’s get down to business.  Pork, or “the other white meat” as it’s come to be known, is beyond versatile.  The flavor of the meat alone is mild and rich all at the same time.  It takes on any flavor put with it, so that means that you can adapt and play with just about any flavors you have on hand.  If you have fresh herbs, tuck those under the bacon to infuse the meat’s flavor even more.  Sage, oregano, or other hearty herbs would be great here.  But if you are looking to just attack the pork in a simple fashion, this is the way to go.

I mean, bacon is like the pork loin’s little brother.  They’re MEANT for to be reunited.  And who am I to deny such a harmonious and delicious family reunion?  So bring this to YOUR family’s table, and they’ll start asking for everything to be wrapped in bacon!

Instructions
  1. Preheat oven to 375 degrees. Pat tenderloin with paper towel to remove excess moisture. Sprinkle with salt and pepper.
  2. Place tenderloin on baking rack over foil-covered baking sheet. Beginning at the top of the tenderloin, wrap slices of bacon in alternating weave around the pork.
  3. Be sure to use enough bacon slices to cover the pork loin. (it looks like a comfy little cocoon, doesn't it?)

  4. Roast in oven at 375 degrees for 30-40 minutes (every oven is different, so begin checking at 30 minutes), or until instant read thermometer reads 140 degrees. Remove from oven and tent with foil; allow to rest for 10 minutes.

  5. Slice pork into 2-3 inch slices for each portion.

  6. Serve with green beans or other green veggie of your choice.

Recipe Notes

There are many, many variations for this recipe.  This is the basic recipe, which is very tasty on its own.  However, you could marinate the pork with various flavors (i.e. teriyaki, chipotle & tomato, jerk seasoning) prior to wrapping it with bacon.  Or you could sprinkle brown sugar or drizzle maple syrup over the top of the bacon for a sweeter version.  Play with the flavors and you've got a versatile recipe that can amaze and impress your family year-round!
