Spring is here! Don’t believe me? Check out the local farmer’s markets and tell me you’re not seeing Spring berries starting to pop up. That means it’s time to celebrate the coming season’s flavors with luscious desserts like this Spring Berry Cobbler!

Spring-Berry-CobblerNo, really.  Spring is coming.  Whether or not your weather agrees right now, it’s a virtual certainty unless you find a time machine lying around and head back to the cold (I wouldn’t recommend it if I were you).  March 20th is the “official” start to Spring, and it has many of us itching for weather that isn’t too cold, isn’t too hot, isn’t too humid, isn’t too…well, TOO anything.  That also means that many of us are thinking really hard about the bounty that (hopefully) awaits at farmer’s markets, local produce stands, and neighborhood backyards.

One of my favorite signs of Spring includes the possibility of the myriad of berries that start showing up in dishes from home cooked meals to fancy restaurants.  From desserts to glazes to sauces to breakfast dishes, berries pop up everywhere, and I LOVE them.  One of the easiest and tastiest ways to get a berry fix is to gather whatever ones you can find, dive into your pantry for a few basic items, and produce a beautiful berry cobbler.  I mean, c’mon.  Is there anything more delicious than a piping hot bowl of warm, comforting, sweet berries with a crunchy top?  I didn’t think so.

This is such an easy dish to throw together that it's great for kids to help out with, and can also be sized-down to individual servings if you use small ramekins instead of a big dish. Either way, get ready for a flavor burst of Spring!

Ingredients

Instructions
  1. Wash all of the berries and allow them to dry at room temperature. Preheat oven to 375 degrees.
    Berry Cobbler Ingredients
  2. Spray 8x8 baking dish with baking spray. Mix berries to incorporate the different types (if using more than one type of berry, that is) and pour into even layer in baking dish.

  3. Combine dry ingredients in large bowl. Mix to incorporate.

  4. Melt butter and pour into dry ingredients.

  5. Mix butter with dry ingredients until crumbly consistency forms.

  6. Pour the mixture over the top of the berries.

  7. Bake at 375 degrees for 25-30 minutes, or until the berries begin to bubble up and the cobbler begins to brown.

  8. Serve immediately, or at room temperature. Refrigerate leftovers for up to 3 days.

Recipe Notes

Raspberries & blueberries in Spring.  Strawberries in mid-Summer.  Blackberries in Fall. Cranberries in Winter. The variation on berries here can be as wide as the selection at the farmer's stand.  Stick with just one, or mix them up for a flavor burst of varying tartness, sweetness, and just plain old tastiness.

As for toppings, there are just as many variations to try.  Ice cream.  Balsamic glaze. Whipped cream.  Cinnamon.  Lemon zest.  Flavored liquor.  Get creative!  Of course, if you don't have any toppings, a spoon is all you need to dig in and enjoy!
