This time of year, few things comfort me as much as a bowl of piping hot soup. And this Warming Butternut Squash Soup is everything comfort should be–creamy, rich, warm, and delicious.

Cold drafts. Brisk winds.  Snow drifts.  Layers of sweaters and scarves.  All of these things may be repellent to many of you, but I admit it–I actually like cold weather.  It IS winter, after all!  It’s supposed to be cold!  And it’s supposed to evoke feelings of comfort, warmth, and hunkering down with a toasty hot bowl of soup goodness. 

A few years ago, a dear friend of mine had this fantastic collection of soups sitting on her cookbook stand called The Soup Bible. I was obsessed with getting a copy for myself.  Luckily, I stumbled upon a copy at a discount book store.  Score!  And so I set forth in diving into the pots and ladles of the various soups and stews laid out on the pages of this great cookbook.

I admit that I am a bit addicted to soup this time of year.  After all, what goes better when you’re sitting on a warm hearth next to a crackling fire than a steaming bowl of comfort?  This is one of those recipes for the cold days ahead, my friends.

One of my favorites from those pages is the Butternut Squash soup.  I come back to it year after year, and regularly “tweak” it depending on my ever-changing tastes.  With so many variations out there, why settle on only one, right?  This is my current go-to version.  My personal tweak to this was adding the white pepper.  It gives the soup a warmth of flavor without being spicy.  To me, it elevates this basic and beautiful soup to new levels of comfort.  Let me know if you like it, or if you have changed it up in other ways.  Soup for everyone!

Ingredients

Instructions
  1. Melt the butter in a large pan. Add the onions and saute until soft, about 5 minutes.
    Sauteed Onions
  2. Add the squash, potatoes and stock; bring to a boil. Lower heat to low and cover, simmering until squash and potatoes are easily pierced with a knife, approximately 35 minutes.

  3. Transfer vegetables and stock in batches to food processor or blender and blend until smooth. *If you have an immersion blender, you can blend the soup right in the pot instead.
  4. Season with salt and pepper to taste. Garnish with sprinkle of chives. Done!
