Pork-Wrapped Pork. Yes, You Read Right…
If pork is good, pork wrapped around more pork is better, right? If you subscribe to this logic, then this simple and flavorful dish is for you. And with only a couple ingredients–bacon, pork, an oven, and POOF!–dinner is served!

  1. Preheat oven to 375 degrees. Pat tenderloin with paper towel to remove excess moisture. Sprinkle with salt and pepper.
  2. Place tenderloin on baking rack over foil-covered baking sheet. Beginning at the top of the tenderloin, wrap slices of bacon in alternating weave around the pork.
  3. Be sure to use enough bacon slices to cover the pork loin. (it looks like a comfy little cocoon, doesn’t it?)
  4. Roast in oven at 375 degrees for 30-40 minutes (every oven is different, so begin checking at 30 minutes), or until instant read thermometer reads 140 degrees. Remove from oven and tent with foil; allow to rest for 10 minutes.
  5. Slice pork into 2-3 inch slices for each portion.
  6. Serve with green beans or other green veggie of your choice.
Recipe Notes

There are many, many variations for this recipe.  This is the basic recipe, which is very tasty on its own.  However, you could marinate the pork with various flavors (i.e. teriyaki, chipotle & tomato, jerk seasoning) prior to wrapping it with bacon.  Or you could sprinkle brown sugar or drizzle maple syrup over the top of the bacon for a sweeter version.  Play with the flavors and you’ve got a versatile recipe that can amaze and impress your family year-round!
