2-Ingredient Prosciutto-Wrapped Mahi Mahi
Never given Mahi Mahi a try? Well, I suggest you change that in short order. This mild white fish has a firm texture, becomes flaky when cooked, and pairs great with so many other ingredients that it could quickly become a staple in your kitchen, too. And of course, anything wrapped in something like Prosciutto is always a winner. If you can’t find Prosciutto, a thinly sliced bacon would work as well. Yay for 2-Ingredient Friday dinners!

  1. Preheat the oven to 425 degrees F. This could actually take longer than the cook time for this super recipe!
  2. Pat the pieces of fish dry with a paper towel. Wrap each piece of fish with one slice of prosciutto.
  3. While oven continues to preheat, heat an oven-safe skillet over medium high heat. Drizzle with olive oil. Place fish, seam side of prosciutto down, in the hot skillet. Sear 2-3 minutes on each side, or until prosciutto begins to crisp slightly.
  4. Place skillet in oven and cook for an additional 5 minutes, or until the prosciutto is crisp and the fish is flaky.
  5. Serve immediately with your choice of sides. Voila! A quick and fantastic dinner is served!
Recipe Notes

While the finished fish may not look like much, the bold and salty flavors of the Prosciutto with the mild yet meaty texture of the Mahi Mahi is a match made in “want a quick and flavorful meal” heaven.  In this case, I had carrots and red potatoes on hand to serve as a side.  I would also easily serve this with steamed green beans or fresh asparagus when it’s in season.
