Fall means not only a change in season, but a change in seasonal foods available. And few things scream FALL like fall & winter squash varieties. This Grilled Acorn Squash is a perfect transition from Summer months (um hello, grilling!) to Fall flavors. Too cold where you are to grill outside? Grab an indoor grill pan and get the same smoky and luscious flavor!
I believe I have made myself abundantly clear in past posts that I am NOT a fan of hot weather. I detest it, in fact. I’m just not one of those people who is cut out for humid, steamy, scorching hot weather. Nope, not for me. This time of year in particular, I crave cooler weather, crisp evenings, and the wonderful foods that inevitably come with it.
When we lived in Texas, however, “Fall” still meant 90 degree days. Sigh…
BUT. Yes, there is a but. In the evenings the weather would finally start to break and allow me to actually be outside! Hooray! And since I can be OUTside instead of INside, I was always trying to find ways to mix my need for Fall food with the realities of Fall in Texas. This recipe was perfect for that.
I could find pretty little acorn squashes at a local farmer’s market, so of course I just had to bring them home and have a little Fall-inspired goodness. This was ridiculously simple, and riDICulously delicious. Sometimes it’s about respecting the basic beauty of an ingredient, and letting it shine. Acorn squash is a perfect candidate for this treatment, and it will be a fantastic accompaniment to anything you choose to serve it with.
Fall is here with this Grilled Acorn Squash. Hooray!

Welcome Fall produce! A little olive oil, a sprinkle of salt & pepper, some fresh herbs, and POOF! You have a delicious and nutritious side dish ready for your family in no time.

- 1 medium acorn squash
- 1 tbsp. olive oil
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1 tsp. fresh thyme leaves
- Preheat the grill to medium high heat. Alternately, preheat a grill pan over medium high heat if you can't grill outdoors.
- Cut the acorn squash in half, and scoop out the pulp and seeds. Slice the squash into 2 inch wide slices.
- Toss slices of squash with olive oil, salt, pepper and thyme.
- Grill for 10-15 minutes, turning occasionally to make sure you get the pretty grill marks and the squash is fork tender.
- Serve and enjoy this beautiful grilled Fall vegetable year-round!
Ah, simplicity and big flavor. A classic combination. What is so great about this recipe is that you can use any firm squash and get similar (but tasty!) results. Can't find acorn squash? Try butternut squash, kabocha, or delicata. They would all grill up nicely.
Too cold to head outside to the grill? No problem! Grab your grill pan and get going! Oh, don't have one? Well, this is my grill pan of choice, and I LOVE it. The Staub grill pan is a little bigger in surface space than some others I've seen, and works great for everything from vegetables like this Acorn Squash to meats other veggies. I've even grilled full ears of corn with this thing. Heck, I don't use it only when it's too COLD outside to grill, but I even use it when it's HOT to stand at the grill.

Ok… I don’t know exactly where you are but here in Dallas it was pretty chilly the past couple of mornings… like maybe 60? I love, love, love acorn squash and this looks totally amazing.
I’m in San Antonio, and it was 97 here on Monday. Ugh. It’s starting to show signs of cooling first thing in the mornings, but DANG I’m ready for cooler weather!

I know what you mean by humidity and hot weather. I live in Alabama and the summers here are super humid. i am always looking forward to cool fall weather, crisp air and the changing of the leaves. This acorn squash looks delicious! I will have to try it soon!
I just moved from Florida where we grilled on Christmas. I was never cut out for hot, humid weather. I might miss being able to grill in October, but I’ll take the cooler weather of Washington state. Your squash sounds delicious.

Fall in Colorado? Blink and you’ll miss it. I love summers here; yes it gets warm but no humidity and always cools down at night. Fall means one thing to me. Snow is next. Ugh. 🙂
