Cod with Herb Pesto
Nostalgia runs deep when reaching for simple and delicious recipe options like this cod dish. Simple enough for a weeknight meal, but pretty enough to impress guests, this Cod with Herb Pesto will become a favorite no matter what day of the week it’s served.

Instructions
  1. Preheat oven to 400 degrees. Pat the fish fillets dry. Place on cooking spray-coated baking sheet. Bake for 12-15 minutes or until fish is flaky.
  2. While the fish cooks, place herbs, salt & pepper in a food processor with the blade attachment.
  3. Add the juice of one lemon. Pulse ingredients until an herb paste forms.
  4. With processor running, slowly drizzle in the olive oil until a smooth sauce results.
  5. Pesto can be stored in the refrigerator in a sealed container for up to a week, or in the freezer for up to 3 months.
  6. Remove cod from the oven, and serve topped with herb pesto.

If you have read any of my recent posts, you know that I am mad for all things pesto.  This recipe is no different.  While in this case you could probably more closely equate the ingredients in the recipe with a chimichurri, I’m calling it pesto anyway.  I love that you can use just about any herbs you have on hand and still come out with a delicious sauce that is not only great on fish, but on veggies, grilled meats, or even mixed with a soft cheese or sour cream to make a tasty veggie dip.
