I have a confession. I used to be the family member who could burn water. No, really. Back in college, I was a live-in nanny for my cousins for 2 summers. When my cousin would wake me as she left for work, she’d let me know what to make the kids for breakfast when we all finally got up. One morning, she told me to make french toast. Given that I was still 80% asleep when she told me this, I said “No problem!” and promptly went back to bed until the baby woke up.
As I stumbled downstairs with the 3 kids in tow, I realized that, huh, I’d never made french toast. The oldest, being very responsible and knowledgeable in his short 10 years, basically walked me through what to do to make breakfast. The three kids (who are all grown and married now, mind you) still like to talk about my lack of ability in the kitchen.
Well, that was then, and this is now, my friends. If I could have served up THIS version of french toast back then, I’d have been even more popular with the cousins (I mean, I was their favorite then, and I’m STILL their favorite now I’m sure). A little cranberry, a little lemon zest, and BAM! Breakfast is served!
Cranberry Lemon French Toast

This version of a classic is SO much better than the regular old stuff. Who needs maple syrup and plain white bread when you can have homemade cranberry sauce, lemon zest, AND use up day-old french bread? I mean, I know I'd rather have this than the old recipe!

Gather the ingredients, and then preheat a nonstick skillet over medium high heat.
Slice bread into 1 1/2 inch slices.
Whisk together eggs and milk.
Melt butter in skillet until it begins to foam.
Dip each slice of bread into egg mixture and place into skillet. Cook on first side for 4 minutes, or until bread comes away from pan easily without sticking.
Cook toast on second side until golden and it doesn't stick to the pan, about 4 more minutes.
Serve with cranberry sauce (see recipe info below) and topped with lemon zest.

This super simple recipe's highlights are the lemon zest, which makes everything more special, as well as the tangy cranberry sauce. And this ain't your grandmother's canned sauce, kids. This is the good stuff, and easier to make than this french toast recipe. I make it every year at the holidays, but sometimes I get a hankerin' for it other times of year, too. So, I keep a jar of it in my fridge. It's good on sweet and savory dishes, or just over vanilla bean ice cream. Get the recipe here so that you don't miss out!
