I don’t know about you, but each week seems to whiz by faster than the week prior. I mean, how in the world can it be the end of September already? For that matter, how is it Fall? Didn’t we JUST ring in the New Year? Sheesh!
Because apparently time waits for no man, woman or beast, the number of days that I need a fast yet satisfying meal seems to keep increasing. Ugh.
A little time in the DELICIOUS marinade, and this beef just falls apart once it’s cooked. Some aromatics added to the pot to round out the flavors, and it’s like Fall comfort on a plate. It really doesn’t get much easier than this meal, folks.

The smells from your kitchen will draw them in. Kids from down the block will want to eat dinner at YOUR house with this hearty & rich 5 ingredient meal.

- 2 lbs. boneless beef ribs
- 1/2 cup dry red wine
- 1 tbsp. Worcestershire sauce
- 4 cloves garlic, peeled and diced
- 1/2 tsp. fresh cracked pepper
- 1 tsp. kosher salt
- 1/2 cup baby carrots
- 1/2 cup yellow onion, chopped
- 1/2 cup celery, chopped
- 1 tbsp. grapeseed oil
- Place the ribs in a glass dish. Combine red wine, Worcestershire sauce, garlic, salt & pepper. Pour marinade over meat. Refrigerate for 20 minutes or overnight.
- Chop vegetables into equal-sized pieces. In a large dutch oven, heat grapeseed oil over medium heat. Saute vegetables until they are soft & translucent, about 10 minutes.
- Remove meat from marinade and place in pot over top of vegetables. Pour remaining marinade over meat & vegetables. Cover and allow to braise for 40 minutes.
- Serve immediately over mashed potatoes or rice. Don't forget those luscious juices!
Don't have time to marinate the meat or wait to braise the ingredients? Turn to your trusty crock pot and let it do the work for you. Place all of the ingredients in the crock pot in the morning, and cook on low for 8 hours. Or if you are don't get it in there in the morning, cook on high for 4 hours instead.
Either way, you'll have a meal ready when you need it, and a dish that you can feel good about feeding your family any day of the week.
