Yeah, yeah, I know. “Breakfast is the most important meal of the day.” “Breakfast is healthy for you.” “Everyone LOVES breakfast.” Blah, blah, blah.
But you know what else breakfast is? It’s EARLY. For those of us who are not “morning people” <shudder>, I’m sure that an early day meal is a regular occurrence. But for those of us who have never been known for being up “bright and early” (how early is that supposed to be, anyway?), even getting a handful of granola in before lunch is a challenge.
Luckily, I’m crafty (and not scissors-and-glue kind of crafty). While I want to be good and have my “3 squares a day”, I also know myself and my undying love for sleep. The snooze button on my alarm and I have a long-running love affair, and I have no intention of breaking up with it this late in the game. So I’ve figured out some shortcuts to make it easier to get that oh-so-important morning meal into me, and the making it tougher to make excuses about the whole thing. In this case, I’ve done it by making these perfectly portioned and perfectly delicious little Super Simple Breakfast Egg Muffins.
I came across several versions of these little protein-packed breakfast bites courtesy of too much time spent on Pinterest. Then I decided to make them, but use my girlfriends as guinea pigs. Mwah-ha-ha-ha. Thankfully these turned out fantastic, and my girlfriends still like me (I think…). Ha.
Topped with a little fresh salsa, these delicious little breakfast bites are perfect any day of the week, and any time you happen to finally roll out of bed. And the way I roll, these Breakfast Egg Muffins could just as easily be served at brunch, which comes at a much more reasonable hour.

And there is a bonus with these Breakfast Egg Muffins: You can customize them based on whatever ingredients you may have on hand, and they can be frozen for up to a week so that you can pull them out and heat them up any day of the week. Super simple, easy peasy, and extra delicious, these Breakfast Egg Muffins will be your family's go-to breakfast for those hurried mornings. Yum!

- 10 large eggs, at room temperature
- 1/2 cup low-fat milk
- 1/2 cup chopped, cooked broccolini
- 1 cup chopped ham
- 1 cup shredded mozzarella cheese
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- Preheat oven to 350 degrees. Take eggs out of refrigerator (if that's where you store them) and let them come to room temperature. Chop ham and broccolini.
- Crack the eggs and add the milk, salt & pepper. Whisk until all yolks are broken and eggs and milk are incorporated.
- Add the ham & broccolini, and stir to incorporate.
- Using a 1/3 c. measure, pour egg mixture into muffin tins that have been sprayed with cooking spray.
- Top each egg cup with 1 tbsp. shredded mozzarella cheese.
- Bake at 350 degrees for 25-30 minutes or until golden brown on top. Note: the amount of time will depend on your oven (mine is a little temperamental at times), so start checking around the 20 minute mark.
- Serve immediately, or allow to cool completely and freeze in freezer-safe container for up to a week.
- If rewarming frozen muffins, remove from container and microwave at 50% temperature for 6-8 minutes. If still cool, microwave at 50% for an additional 3 minutes, or until muffins reach desired temperature.
I'm sure that any of you who read my recipes on a regular basis (and I'm sure you do, right???), you know that I am the Queen of Variation. I never follow a recipe exactly the same way twice, but that's generally because I'm tweaking ingredients based on what I have on hand or need to use up. Waste not, want not, yes?
In this case, I had some leftover steamed broccolini on hand from the previous night's dinner. I also had some ham in my deli drawer. Mozzarella cheese was the first one I grabbed that morning. But you could certainly use anything from sausage to turkey to shredded chicken for the added meat protein. Don't have broccolini? Use chopped, cooked asparagus, or spinach, or even cooked peas to add that splash of green (and extra nutrients!). And of course, any cheese you may have on hand would be a great addition. I mean, could you imagine smoked turkey with asparagus and a smoked gouda? Oh my gawd, I need to make that one next...
I love recipes that can be frozen and pulled out as needed, plus breakfast recipes are always fun to try. I love how these truly puff up like a muffin. I would add the salsa with a dollop of sour cream and few slices of fresh avocado. Yummy!
I even warmed one up and wrapped it up like a breakfast taco. So easy and yummy! :o)

I am SOOOO not a morning person. I hate making a big breakfast. I prefer to reheat something or have something simple. Unless we’re eating breakfast at noon, then I am cool to cook something. This looks so good. Seriously loaded with goodies.
And I love that you can switch out the goodies in these based on what you have handy. A great way to use up leftovers, too!

Those look amazing! I am going to have to try them. I actually love breakfast, but I am always running late in the morning so I can only ever eat a granola bar in the car. This could definitely replace that.
I’ve been doing this this for the past few months because like you said it’s too early to breakfast. But mines are sometimes watery and never come out perfectly shaped like yours ☹ and I sometimes forget about them in the oven *oops* must pin this and try it this weekend ❤️❤️
