Apologies to Brittany Spears, but oops, I stuffed it again.  Today I am pushing another recipe for Spinach Dip Stuffed Peppers (I posted a similar recipe last Friday, but who’s keeping track?).  But they really ARE different!  This time it’s spinach dip in there!

And who can really blame me?  I mean, baby bell peppers, like so many other veggies, are the perfect vessels for stuffing any host of ingredients.  Heck, I say if you can serve it on a plate, you can stuff into a vegetable.  So maybe that little saying isn’t exactly a bumper sticker waiting to happen. It still stands true most of the time.

So get over it.  I stuffed some more peppers, and I stuffed ’em good.  I stuffed ’em this time with Spinach Dip.  Yeah, you know that sounds awesome.  You know you want to get this recipe in your bell-eh right now.

I think I may have alluded to the fact in previous posts that I tend to get into a groove on certain things (certain recipes I tend to make variations on, until my husband cries for something different).  I get so into it that I just start riffing on ingredients until I find my next muse.  These baby bell peppers are no exception.  And lucky for you, since you may just be in the market for a new idea for holiday appetizers.

When you think about this recipe, it really was only a matter of time until someone married these two great party appetizers into one.  And I am here to tell you that I am that person.  I present to you for your consideration (and eating pleasure) Spinach Dip Stuffed Peppers.

First, Stuffed Peppers.  Um, duh.  Stuff just about anything into these little gems, stick them under the broiler, and you have a party-pleasin’ platter in no time.  Second, who doesn’t love Spinach Dip?  I mean, creamy, crunchy, warm, and depending on your variation, even cheesy.  All wrapped up in a bite-sized and colorful pop of a Baby Bell Pepper.

Ta-da!  Holiday party platter DONE.   Merry everything, ya’ll.

Instructions
  1. Preheat oven to broil. Clean baby bell peppers, slicing open lengthwise and removing pith and seeds. Mix spinach, mayonnaise, sour cream, artichoke hearts, and carrots together thoroughly.

  2. Add half a packet of Hidden Valley Ranch dressing mix and stir to blend completely with other ingredients.

  3. Add chopped green onions and stir to incorporate.

  4. Using a teaspoon, stuff each baby bell pepper with spinach dip mixture.

  5. Broil stuffed peppers for 12-15 minutes, or until they begin to brown and blister on top.

  6. Serve hot and start planning on the next thing you're going to stuff in a bell pepper!

You didn't think I was done with this recipe did you?  I mean, in case you hadn't noticed, this recipe for the Spinach Dip makes a lot more than what will go in those peppers.  What else can you do with the remaining Spinach Dip?  I'm glad you asked.

  1. Serve cold with sliced veggies
  2. Serve warm with crispy crackers
  3. Spread onto toast and make a grilled spinach dip panini
  4. Mix it into pasta
  5. Spread it on a crostini, then broil and serve hot
  6. Toss it into an omlette

Yeah, you know you're thinking about things to add to this list.
