Yup, I still have tomatoes coming out of my ears! And that could be painful if they weren’t so darned delicious. My father-in-law has started sharing his crop with us, and I’m so glad he has because that means fresh tomatoes in EVERYTHING as long as they last! First, I went with a super simple Fresh Summer Tomato Salsa. I mean, it’s hard to beat a salsa brimming with sweet tomato goodness as a go-to for using Summer’s bounty.
But I still had a pile of these goodies to use up, so I decided to make a meal out of it. POOF! Easy Summer Tomato Flatbread was born. I know, I know–since I used a pre-made pizza dough, I suppose this could also pass for a sauce-less pizza. But because I used the the traditional original dough, I knew it would puff up enough to create a perfect cradle of bread-y goodness for these ripe beauties.
It’s hot as hell here across the country now, which makes me gripe about the weather a LOT. However, that hot weather also means that I have ready access to fresh herbs right out my back door. They are bolstered by the heat, so at least I have that to rely on from my air conditioned kitchen. And rely on the I did to amp up the sweetness in these garden-ripe tomatoes, resulting in a perfect mix of sweet, savory, and salty for a perfect bite on a hot night.
Time for you to grab a tube of dough (so to speak) and make your own Easy Summer Tomato Flatbread! You’ll be hoping for a whole new crop of tomatoes in no time!

The hit--or tomatoes--just keep on comin'! Use up that garden bounty with this super easy, and super delicious savory herbed tomato flatbread. Sweet tomatoes, crunchy crust, and salty Parmesan cheese make this appetizer good enough to elevate to a main meal!

- 1 tube frozen pizza dough, defrosted
- 3 medium vine ripe tomatoes, sliced
- 1 tbsp. freshly chopped herbs, such as oregano or thyme
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- extra virgin olive oil, for drizzling
- Defrost the pizza dough and roll it out on a cooking spray-coated baking sheet. Preheat the oven to 350 degrees.
- Place the sliced tomatoes evenly across the dough. Sprinkle with herbs, cheese, salt & pepper.
- Place dough in the oven and bake for 8-10 minutes, or until the edges begin to brown and the cheese melts.
- Drizzle the bread with extra virgin olive oil. Slice and serve immediately.
This Summer Tomato Flatbread is so ridiculously easy to make that I'm certain I'll be changing it up throughout the Summer months as other vegetables begin to overflow local gardens and farmer's markets. How about a fresh zucchini flatbread? Or a garlic scape bread? What would you put on this easy, pre-made dough?

This looks like a great way to use up just about extra everything! I bet it would work great with my 5 minute pizza dough recipe, too. Though I think I’ll probably add some mozzarella when I make this 😉
You’re so lucky to have an (over?) abundance of fresh tomatoes! We’ve tried to grow them here in Phoenix, with not a lot of luck, but I need to try again because it can be done! This flatbread looks amazing, and the perfect way to enjoy those tomatoes!
Thankfully, my father-in-law has a green thumb so we wound up with a pile of them! And the ones at the markets are just fantastic, too.
