Epicure started 23 years ago when a busy mom found that she needed ingredients that would suit her family’s dietary needs.  She started making ingredients that she could trust.  But then word spread, and thus Epicure was born!  They are known for meal solutions that are free from chemicals–organically-sourced, no MSG, no artificial colors, and all made in peanut-free facility.  I mean, you can actually read the ingredients and know what the heck is in them.  Novel concept, no?

I was introduced to Epicure a year ago, and I admit I was skeptical.  I mean, how tasty and versatile could these products really be? Um, really, REALLY tasty and versatile, it turns out.  I started slow, and then found myself experimenting with the various products.  And of course now, the versatile flavor bomb of California Garlic Pepper Blend turning me into a kale eater!

Now here’s the caveat–of course you can make all of these great recipes with other store-bought ingredients.  No problem.  But now that I have become more label-conscious, I realize that I have been putting a lot of unnecessary and unreadable ingredients in our foods.  It’s a process, but I’m learning to reach for healthier options when punching up recipes and make-ahead meals–and I feel better about serving it to friends and family.

But for me, it’s not only doable and delicious, it’s more in line with my shifting views of where our food comes from and how we use what is around us in more responsive fashion.  Yeah, yeah, food with a conscience.  It’s not in everyone’s wheelhouse, but it is more and more for me.  And at the end of the day, I can only control me, right?

However, I am also a big proponent of sharing great stuff to eat.  I love telling folks about the creative ways I’m incorporating ingredients I trust. And Epicure makes it super easy.

These Kale Chips have turned me into not only a kale eater, but even a coconut oil convert.  I was certain that I would hate cooking with it because I don’t like coconut.  Well surprise, surprise! It doesn’t make my food taste like coconut at all. But now I’m getting all of the super health benefits of it without a second thought!

Instructions
  1. Preheat the oven to 400 degrees. Wash & pat dry the kale. Tear the kale into bite sized pieces.

  2. Place on a parchment paper-lined baking sheet. Toss with coconut oil & Garlic Pepper Blend.

  3. Place in 400 degree oven, and bake for 5 minutes. Pull the baking sheet out and gently toss the kale to ensure no pieces are sticking together. Place back in oven and bake for an additional 5 minutes. Toss the kale once again. Back in the oven one more time! 5 more minutes or until the chips are at the desired crispness.

  4. Serve immediately, or store in an airtight container for up to 4 days.
