Whoosh! Did you hear it? This week, like so many, went by in a flash! Admittedly, there were moments when I thought it would never end, but here we are–it’s Friday! I feel like I haven’t had a moment to plan dinners this week, let alone get to the grocery store. So on another recent end-of-week dinner panic, when I had only a few minutes to run in and see what was available at the fish counter, I grabbed a measly 2 ingredients and came out with the fixin’s for a fantastic (and SUPER simple) Friday dinner. That’s right kids–it’s 2-Ingredient Prosciutto-Wrapped Mahi Mahi! Yippee!
No, really. Only 2 ingredients (plus some olive oil, which doesn’t count as an extra ingredient in my book) meant we were in the kitchen, cooking the meal, and then and pulling into Flavortown in 30 minutes.
This is one of those supper-saver recipes that makes you so glad that you read cooking magazines for inspiration. I had read recently a recipe for basically this dish. I think it may have called for additional herbs, or maybe a sauce for the fish as well. However, in my moment of panic at the fish counter in my grocery store, all I could remember was FISH and PROSCIUTTO. I mean, those are the most important pieces, so how could I screw it up?
Wait, I can always find a way to screw up the simple things. But luckily this one turned out just great. Whew!
When I hurried to the seafood department (I had it in my head that I wanted fish for dinner), I asked the person behind the counter what was fresh. I was super happy to hear that one of the options was the Mahi Mahi. We eat a lot of salmon, and while I really love it, I was hoping for a little variety. And did I mention it was on sale? Score!
And the meat department is right next to the seafood department, so grabbing a package of Prosciutto was a breeze. I knew I would have to figure out the sides on my way home, but I also knew that I had some items to choose from when I came blowing through the door.
A quick pan-fry of this 2-Ingredient Prosciutto-Wrapped Mahi Mahi later, and dinner was served. And it was quick. And it was delicious. And all was well with the world. Ahhh…

Never given Mahi Mahi a try? Well, I suggest you change that in short order. This mild white fish has a firm texture, becomes flaky when cooked, and pairs great with so many other ingredients that it could quickly become a staple in your kitchen, too. And of course, anything wrapped in something like Prosciutto is always a winner. If you can't find Prosciutto, a thinly sliced bacon would work as well. Yay for 2-Ingredient Friday dinners!

- 4 4 oz. slices of Mahi Mahi
- 4 slices thinly sliced Prosciutto
- 1 tbsp. olive oil
- Preheat the oven to 425 degrees F. This could actually take longer than the cook time for this super recipe!
- Pat the pieces of fish dry with a paper towel. Wrap each piece of fish with one slice of prosciutto.
- While oven continues to preheat, heat an oven-safe skillet over medium high heat. Drizzle with olive oil. Place fish, seam side of prosciutto down, in the hot skillet. Sear 2-3 minutes on each side, or until prosciutto begins to crisp slightly.
- Place skillet in oven and cook for an additional 5 minutes, or until the prosciutto is crisp and the fish is flaky.
- Serve immediately with your choice of sides. Voila! A quick and fantastic dinner is served!
While the finished fish may not look like much, the bold and salty flavors of the Prosciutto with the mild yet meaty texture of the Mahi Mahi is a match made in "want a quick and flavorful meal" heaven. In this case, I had carrots and red potatoes on hand to serve as a side. I would also easily serve this with steamed green beans or fresh asparagus when it's in season.
If you can't find Mahi Mahi, you could easily substitute another firm, white fish. Cod is a good alternative, as is halibut. Let me know what you use and how your family likes this 2-Ingredient Prosciutto-Wrapped Mahi Mahi trip to Flavortown!

I adore prosciutto so much. It is a great way to add flavor without a ton of calories, surprisingly. Plus this is easy. Sounds perfect for a weeknight.

I’m the same way: we eat a lot of salmon, living in the Pacific NW, and it’s nice to mix it up a bit. Mahi Mahi is so delicious! I never would have thought to pair it with prosciutto, but it sounds and looks amazing together. Brilliant!
