The last of the summer strawberries can be enjoyed with this “cheater” dessert. It will be a hit on whatever table you bring it to, and please those berry lovers waiting for a last taste of berry goodness. Make this easy Strawberry Angel Food Cake and savor the last flavors of summer!
I love berries. I love blackberries, blueberries, raspberries–I love them all. But none really scream “SUMMER!” more than fresh, sweet, ripe strawberries. And here in Texas, we have a longer growing season for certain types of produce, so I get to enjoy some of these goodies longer than most. One point for Texas, right?
And because I can get my hands on these beauties a little longer, I try to use them whenever possible. I love that I don’t need to get fancy to draw out the natural flavors of these gorgeous berries. Simplicity really is best in this case.
In fact, for this particular recipe, I went REALLY simple (read: I cheated and bought the angel food cake), and the results were so pretty and tasty I made two. One for me (well, I should say that I shared it, but how would you know??), and one I took as a took to a group of folks I know as a “thank you”. Who wouldn’t want a “thank you BERRY much” in the form of food?
While I’m clearly highlighting the simplicity and beauty of the strawberry here, you could use pretty much any other fruit out there–even stone fruits like peaches, plums, or even apples if you get the urge to make something like this in colder months. Or use frozen berries for a summery-surprise in the middle of winter!
Either way, I’m sure your guests will be saying “thank you BERRY much”, too!

What is so great about a super simple cheat of a dessert like this is you can use whatever berries you may have handy, and with a quick trip to the store you can prepare a beautiful and delicious dessert in no time flat!

- 1 pint fresh strawberries
- 1 angel food cake
- 1/2 lemon, juiced
- 1 tbsp. sugar
- 4 oz. whipped cream
- Wash strawberries, and then slice into 1/2 inch pieces. Toss strawberries with lemon juice and sugar. Allow berries to sit for 20 minutes, or until juices from berries are released.
- Slice angel food cake in half so that it is in layers, not slices. Spread bottom layer with 1/2 of the whipped cream.
- Top the whipped topping with half of strawberries.
- Place second piece of cake on top of berry layer. Repeat whipped topping and berries on top layer of cake. Refrigerate for 30 minutes, or up to overnight. Slice, serve, and enjoy the last of the summer berry bounty!
Would this be just as good with home made angel food cake and freshly whipped cream? Of course! Could you add and change the flavors and get an equally pretty and delicious dessert? You bet! You could even cube the angel food cake and make individual versions of this tasty treat.

Funny, I often make a self-serve version of this when I entertain. I buy a pre-made angel food cake and cut it into slices and serve it with whipped cream and strawberries on the side. I’ll try yours next time!
